Perfectly spiced and wonderful meal for lap-band surgery patients - Citrus Chicken Makes 4 regular servings (double calories) or 8 WLS servings of 1/2 chicken breast each
Serves 8 - 1 tbs butter
- 4 chicken breast, boneless, skinless, between 6-8 oz each
- 2 cloves garlic, thinly sliced
- 1 tsp lime zest, finely chopped
- 2 tbs lime juice
- 1/4 tsp ground ginger
- 1/8 tsp crushed red pepper
- 1 orange
- 1/4 cup chicken broth, fat-free
- 2 tsp arrowroot
In a large skillet melt butter over medium heat. Add chicken and garlic. Cook 4 to 5 minutes per side until cooked through. Stir garlic occasionally to avoid burning. While chicken is cooking, in a small bowl combine lime peel, lime juice, ginger, and crushed red pepper; set aside. Peel orange. Reserving juice, cut orange in half lengthwise; cut crosswise into slices. Add orange juice and lime juice mixture to chicken in skillet. Place orange slices on top of chicken. Cover and cook for 1 to 2 minutes or until heated through. Remove chicken to serving platter and keep warm. Add 2 tsps arrowroot to 1/4 cup of chicken stock and add to skillet drippings. Cook over medium heat 1 to 2 minutes until slightly thickened. Spoon over chicken prior to serving.
